We are recruiting on behalf of a food production company who deliver bespoke culinary solutions for the restaurant, retail and wholesale sectors. The company manage projects from concept to end product.

About the job:

Our client is looking for an NPD Chef / Assistant to work and assist in their new product development section. You will be supporting the NPD Chef with every aspect of concept through to delivery. You must have a passion for food!

Responsibilities:

  • Printing tasting sheets for the week; carrying out organoleptic testing on samples.
  • Preparing ingredients for production.
  • Reporting to the finance department on a monthly basis.
  • Researching current, emerging and future food industry trends.
  • Designing dishes based on trends/customer ideas.
  • Writing new recipes concept to delivery.
  • Fully costing recipes and sourcing new ingredients
  • Taking customer request and converting to recipes suitable for factory environment.
  • Managing time effectively to ensure deadlines are met, with reactivity to unexpected occurrences both in the factory and the kitchen which affect planned schedule.
  • Liaising with suppliers and customers.
  • Writing process sheets.
  • General kitchen cleaning.
  • Making lists of ingredients required for samples and gathering from stock/ordering samples when necessary.
  • Cooking samples, tweaking as required to satisfy customer, cost and yield requirements.
  • Arranging sample deliveries to customers.
  • Supervising manufacture of new product lines in factory.
  • Writing organoleptic/visual reference sheets for all new products.
  • Raising purchase orders and ordering stock lines when required.
  • Full participation in factory trials and first cooks of all new products.

Experience you need:

Ideally you will be a classically trained but with an understanding of mass catering/production and fine dining.

Hours of Work:

Monday - Friday 08:00-17:00 (also must be flexible for product launches or any other business needs)
